Fine (Brandy)
The "Fine de Marne" is the result of the distillation of the juice produced on each champagne press on top of the Champagne appelation. The juice is let to ferment and then distilled at 70%. It is then aged in new wood barrels for 5 years before a final year in a barrel previously used to age Burgundy wines. This brings to it a wonderful woddy note, a savoury colour and vinous & dry notes. Very enjoyable as a digestive, it is also used in cooking to obtain fine sauces.
