The magic of the ageing. The crystal clear color. Has this stage of the ageing, we lost about 50% of alcohol the part of the angels. This natural reduction allowed the evaporation of practically all the alcohols fowls and the concentration of the aromas of apples with now, the alliance of a wooded taste, returned slowly and without tannin. (Less than 2% use of new barrel).
